A perennial climber, native to tropical western South America, where it grows at low elevations. It has trifoliate, dark green leaves and white to bluish-violet flowers, followed by reddish pods with kidney-shaped or flattened seeds. Pachyrhizus tuberosus produces an edible, starchy and very tasty tuber, with a high protein content, which can be consumed raw or cooked. The immature seed pods can also be eaten, but only after they have been thoroughly cooked. A nutritious, high yielding edible plant, ideal for tropical regions.
